  • Knead Until Smooth: Transfer the dough to a lightly floured surface and knead for about 8–10 minutes until soft and elastic.

Step 2: Let the Dough Rise

  • First Rise: Place the dough in a greased bowl, cover it with a clean towel, and let it rise in a warm place for 1–1.5 hours, or until it doubles in size.
  • Punch Down the Dough: Once risen, gently deflate the dough by pressing it down with your hands.

Step 3: Shape the Gipfeli
